Is there a more delightful flavour than Lemon! Well I think not, so it was always going to be the front runner for the flavour of my wedding cake. This pic was the second practice and the best looking one of the four I made for practice and the big day.
In the past I’ve had trouble getting Italian Meringue to whip to stiff peaks, it’s very fragile during the syrup adding stage.
It’s part of so many things I regularly make so I’ve got my technique down now. But at the time I made this I got beginners luck, not realising the trouble I would have in the future.
This beauty is exactly how it should look, the actual wedding cake was 4 tiers – too large. My best man said it looked like a tampon! Not that it was the height that made him say that, but I have to wonder what super size lady plug Naomi, his wife is hiding in the bathroom cupboard.
To secure a cake of such height I bought a cake sturdy.
